Abstract : | The aim of this study was to compare the nutritional value of natural Fabaceae seeds (pea, faba bean, yellow lupine) with that of dehulled and extruded seeds. In the first stage of the research, the thousand seeds weight (TSW) was evaluated, then the seeds were subjected to dehulling or extrusion. In the next step, the contents of basic nutrients, gross energy, selected macroelements (Ca, P, K and Na) and anti-nutritional substances (phytates, tannins, trypsin inhibitors and alcaloids) were analysed.
