Abstract :

The experiment was carried out at the Experimental Station of Cultivar Assessment in Przecław near Mielec. The effect of intensity of production technology on some qualitative indices and protein fractional composition in the grain of population and hybrid wheat cultivars were examined. An increase in production technology intensity resulted in growing values of qualitative traits, as well as in accumulation of glutenins in grain, that is the more valuable fraction of storage proteins, and a smaller amount of gliadins, as well as albumins and globulins. Grain of the population cultivar Bogatka stood out with a better quality, particularly a higher content of wet gluten, and was characterised by good test weight and grain uniformity, as well as a higher thousand grain weight. The hybrid cultivar Hymack showed significantly lower values of the studied parameters, and the differences in the amounts of protein fractions of gliadins and glutenins in relation to the cultivar Bogatka were 12.0 and 17.7%. The observed quantitative ratio of gliadin to glutenin fractions in grain of wheat cultivars may suggest a certain decrease in the qualitative value of protein.
